Goolwa Pipis Africola Restaurant

INGREDIENTS

2kg Goolwa Pipis

Hot Broth:
250ml soy sauce
50ml ketsup manis
50ml White Vinegar
1 hot chilli chopped
2 cloves of garlic chopped fine
80g unsalted cultured butter
100ml of white wine
Salt to taste
heaps of lemon

METHOD

1. Soak your pipis in fresh water overnight.
2. Place the soy, Ketsap manis and chillis in a bowl and emulsify with hand blender.
3. For the broth, fry the garlic and ginger in the butter until translucent, add the pipis and the white wine and bring to the boil. Add soy mixture, vinegar and season with heaps of lemon.
4. To serve, throw in a bowl and eat with crusty bread!
