Spanner Crab & Avo Toastie


Ingredients
250g hand picked Spanner Crab meat
2 tbs mayonnaise
1 tbs creme fraiche
zest of 1/4 lemon
1 tsp finely chopped tarragon
1 tsp finely chopped dill
2 tsp sliced chives
squeeze of lemon juice
pinch of cayenne pepper
dash of tabasco
salt and pepper to taste
4 slices sourdough bread
butter
1 ripe avocado
Method
Pre-heat BBQ plate or fry pan to medium-high heat.
Generously butter sourdough bread on one side and add to pan or BBQ plate.
Whilst bread is toasting, combine creme fraiche, mayonnaise, lemon zest and herbs. Gently stir together until combined.
Carefully fold in Spanner Crab meat, season to taste with cayenne, tabasco, lemon juice and salt and pepper.
Do not over work crab as it will lose its flake and become pastey.
Once bread has reached golden brown, remove from hotplate.
Thinly slice avocado and layer on the untoasted side of the sourdough. Top with Spanner Crab mayonnaise mixture, dress with another splash of tabasco and top with another slice of toasted sourdough.
