Garfish and Sweet Bun Sliders

INGREDIENTS
12 Sweet buns
(available Asian grocers or Asian bakeries)
6 whole medium garfish, filleted, all bones/fins removed and cut in half
Butter
¼ ice burg lettuce - sliced
2-3 ripe tomatoes - sliced
¼ cup mayonnaise
(kewpie is a great brand for this)
Wild fennel
Parsley
¼ chilli
Sriracha Hot Chilli sauce (a spicy delicious addition!!)
METHOD
Chop herbs and chilli, add to mayonnaise (add some Sriracha sauce to taste) and mix well.
Heat a frying pan on high. Add a little butter, when sizzling, add garfish fry for 15 seconds, turn and remove from heat.
Each bun will need: dollop of mayonnaise mixture, lettuce, two slices tomato then your cooked garfish. Spike with a fancy toothpick and arrange on a large platter. Great for casual get togethers with friends.
