Whiting Poke

INGREDIENTS

3 medium whiting, all skin and bones removed
1 tspn fish sauce
(mega chef brand is fabulous)
¼ chilli diced fine
1 spring onion sliced

3 cups of cooked sushi rice
(seasoned with rice wine vinegar, sugar and mirin)

1 large carrot
1 large capsicum
Handful baby spinach
½ cucumber
1 punnet cherry tomatoes
1 mango

METHOD

Cut whiting into bite sized pieces and mix with fish sauce, chilli and spring onion. Set aside.

Slice all other ingredients into pieces that are easy to pick up and eat with the rice.

Place the cooked sushi rice into a large serving bowl. Arrange the cut vegetables and fruit on top of the rice and finish by topping with the marinated whiting. Alternatively, give your friends a bowl of rice each and have the other ingredients on separate platters and bowls so people can help themselves to what they prefer. This is a dish that is best when using what is in season, check out your local green grocer and have a chat with them.
